Healthy Tomato Herb Roasted Chicken

Ingredients

1 pack of chicken thighs (3-4 thighs)

1 tbsp olive oil

1 sprig fresh rosemary, minced

1 sprig fresh basil, minced

1/2 lime, juice

2 fresh cloves garlic, minced

1/2 tsp black pepper, salt, garlic powder

7-10 cherry tomatoes

1/2 yellow onion

Directions

  1. Wash chicken thighs and place in a large bowl.

  2. Add olive oil, rosemary, basil, lime juice, garlic, and seasonings. Mix by hand until ingredients are combined.

  3. Cover bowl with plastic wrap and marinate in fridge for 2-4 hours.

  4. Preheat oven to 395 degrees Fahrenheit. Bake for 25 minutes. Increase temperature to 410 F and cook another 10 minutes. Lastly, broil on high heat for another 5 minutes or until skin becomes golden brown.
