Mushroom Meatball Spaghetti

Pasta can totally be healthy when you add some color and balance! Balance is always making sure there’s a carb, protein, and some sort of produce like veggies or fruit. Carbs are a friend not a foe so follow this recipe below to enjoy a guilt free carby meal :)

Servings 2

Ingredients:

  • 8oz Lean ground beef

  • 3 garlic cloves, minced

  • 1 tsp Adobo seasoning

  • 4oz spaghetti (~2 cups cooked)

  • 2 tbsp whipped butter

  • 1 cup mushrooms, chopped

  • 2 roma tomatoes, large chunks

  • Garlic powder

Directions:

  1. Boil water in a medium pot and add a generous amount of salt. Once boiled, add pasta and stir. Cook for about 7 min or until al dente. Save 1/4 cup pasta water before draining!

  2. In a medium mixing bowl, mix ground beef, garlic, and adobo seasoning until well combined. Form combination into 1 inch meatballs.

  3. In a medium sauce pan on medium to high heat, spray cooking spray and place meatballs on pan. Cover pan with a lid to help evenly cook meatballs. Flip meatballs on each side every 2 min until ball is golden brown (about 6 min total).

    *Make sure to replace lid every time you flip the meatballs.

  4. Once fully cooked, remove meatballs onto a separate plate. In the same pan on medium heat, add whipped butted and chopped mushrooms. Cook for about 3 min covered.

  5. Add pasta and pasta water to sauce pan with mushrooms and toss. Sprinkle moderate amount of garlic powder. Add roma tomatoes and mix for another 2 minutes. Remove from heat and serve into 2 portions.

  6. Enjoy!
