Banana Bread Crumble Muffins
Like I always say, everything in moderation! Just because I am a dietitian, doesn’t mean I don’t have a sweet and/or salty tooth just like you!
I came across a banana bread recipe and decided to turn it into muffins with some streusel (crumbley, sugary, cinnamony goodness) on top….Best decision I ever made! You’ll be saving these all for yourself after you try them ;)
Preparation: 10 minutes
Cooking: 20 minutes
Ready in: 30 minutes
Ingredients
For the muffins
2 bananas
2 eggs
2/3 cup sugar
1/2 cup vegetable oil
1 2/3 cup all purpose flour
1/2 tsp salt
1/2 tsp cinnamon
1 tsp baking soda
For the streusel
1/3 cup flour
1/2 cup sugar
1/4 cup cold butter
1/2 tsp cinnamon
Directions
Preheat oven to 375 degrees F.
In a medium bowl, combine bananas, eggs, sugar, and oil for the muffins.
Add flour, salt, cinnamon, and baking soda. Mix until just combined.
Pour into 12 standard muffin cups.
For the streusel, mix flour, sugar, and cinnamon in a separate bowl. With a pastry cutter, cut in cold butter. Distribute mixture over the muffin batter.
Bake for 20 minutes. Enjoy!
