Ingredients:
2 oz Linguine/spaghetti pasta (or dime coin sized bunch)
1/2 Shallot
3 garlic cloves
1 tbsp oil (optional)
1 tbsp butter
1 can clams
1 Roma tomato
Salt, pepper, parsley, onion powder
Swaps:
Try swapping out the regular pasta with 2 oz protein pasta for extra protein
Replace both the oil and butter for 2 tbsp margarine if you want to cut some calories
Directions:
Boil a small pot of water with a generous amount of salt. Add pasta and stir.
Dice the shallots and mince the garlic. Chop the tomato into large chunks. Heat a medium sauce pan with the oil or 1 tbsp margarine and add the shallots and garlic. Let them become soft and translucent.
Add the butter or rest of the margarine and clams to the sauce pan and lower to low heat. Add the spices to taste and stir.
Once the pasta has boiled to al dente texture, drain the water but reserve about 1/4 cup of the pasta water. Add the pasta and pasta water directly to the sauce pan.
Stir the pasta in the sauce pan for about 1-2 minutes and then add the chopped tomatoes. Stir for about 30 seconds.
Place the pasta dish into a bowl and top with more parsley.
Enjoy!
